Boozy Peaches n’ Cream Popsicles with Alibi Whiskey

The good folks over at Alibi Whiskey recently gifted us with a bottle of their premium American bourbon and while we love a good Old Fashioned or Whiskey Sour, we wanted to find a creative new way to utilize this delicious new spirit.  Pinterest to the rescue!  Online we found several recipes for “boozy” popsicles and settled on a delicious non-dairy one that called for fresh peaches and coconut milk (two of our summer-time favorites).  We gave the menu our own spin and ended up with a tasty and refreshing (adults-only) summer treat to share with our friends!

Alibi Whiskey


(4) Fresh peaches (remove the skin)

1 Can Full Fat Coconut Milk

Approx 1/2 inch of Fresh Ginger (grated)

Squeeze of Honey (to taste)

Sprinkle Cinnamon (to taste)

Alibi Whiskey to taste (we used a “healthy” serving, you can adjust to your preference)

Place all ingredients in the blender and mix until you reach the desired consistency.  We only let it run for only a few seconds to keep the peaches chunky.  Pour mixture into popsicle molds.  Freeze overnight.  Enjoy (responsibly)!
